Liquorice, or licorice is the root of Glycyrrhiza glabra from which a sweet flavour can be extracted. The liquorice plant is a legume that is native to southern Europe and parts of Asia.
Most liquorice is used as a flavouring agent for tobacco, particularly US blend cigarettes, to which liquorice lends a natural sweetness and a distinctive flavour and makes it easier to inhale the smoke by creating bronchodilators, which open up the lungs.Liquorice flavours are also used as candies or sweeteners, particularly in some European and Middle Eastern countries. Also known as "sweet root," licorice root contains a compound that is about 50 times sweeter than sugar. Liquorice extracts have a number of medical uses, and they are also used in herbal and folk medications. Licorice is a traditional treatment for cough, asthma, and sore throat. One study found that gargling with licorice before getting anesthesia cut the incidence of postope rative sore throat by half.

In Azerbaijan, the history of licorice root processing goes back to the end of the XIX century. The licorice root is supplied from these places of Azerbaijan:
Kurdamir, Sabirabad, Saatli, Imishli, Zardab, Ujar, Barda, Agdash, Shabran, Khachmaz.
Historically, licorice root and licorice root products exported from Azerbaijan to many countries and it is exported today.These countries are Iran,Turkey,France, England,Spain, Japan, China, India, Egypt, and other countries. Quality of licorice root which grows in Azerbaijan is very high.
